Day 1 – Experience: Northern Ireland

  • Depart by helicopter for Midleton County Cork
  • Full-day Whiskey Masterclass at Midleton Distillery with dinner at the distillery

DAY 9 – Experience: Private Cooking Class with Ireland’s Top Celebrity Chef, Kevin Dundon***

* Michael Gibbons is one of Ireland’s leading field archaeologists. Born and raised in the Connemara region, Michael is a graduate of University College Galway with a degree in History and Archaeology. He is a member of the Institute of Archaeologists of Ireland with 30 years of experience as an archaeologist and completed a 5-year term on the Archaeology Committee of the Heritage Council. He has worked with the Department of Antiquities in Jerusalem and for the Museum of London City Excavation Programme. In Ireland, he worked on the Donegal Archaeological Survey and Galway Archaeological Survey before being appointed as co-director of the National Sites and Monuments Record, Office of Public Works for a period of ten years. He has directed surveys and excavations on Croagh Patrick and has mapped the uplands and islands of the Connacht Coast. He remains an archaeologist in private practice, and makes regular contributions to archaeological and historical conferences in Ireland as well as delivering lectures to local archaeological and historical societies and contributing to archaeological and maritime programmes on local and national radio. Michael is a member of the Nautical Archaeology Society and his current research interests include the archaeology of Irish uplands and islands, in particular the maritime pilgrimage tradition. He has carried out detailed research on some of the most important of these including Skellig Michael World Heritage Site, St MacDara’s Island and Caher Island. Recent archaeological work has included mapping the intertidal zone of the Galway and North-Burren Coast with a particular focus on the prehistoric midden complexes, vernacular quays, harbours and seaweed farms.

*** Kevin Dundon is the Chef/Proprietor of Dunbrody Country House Hotel & Restaurant, located in Ireland’s sunny South East. Dunbrody was established in 1997 by Kevin and his wife Catherine. It is now considered to be one of Ireland’s Premier Hotels & Restaurant. Kevin’s runs a cookery school at the hotel as well which is already recognised as one of the most respected in the country.  Over the past few years Kevin has steadily built his media profile and has appeared on numerous TV channels including ESPN Cable, CBC (Live) Canada, UKtv Great Food Live, BBC1s Saturday Kitchen, RTE (Live) the Today Show. Kevin’s programme Christmas Made Easy with Kevin Dundon was one of the highest polling cookery shows on RTE in 2012.  He is also a regular on Irish radio. More recently he appeared on the NBC Today show live on St. Patrick's Day while in New York representing the Face of Irish Food.  His nine-part prime time Cookery Show – Modern Irish Food with Kevin Dundon aired on both RTE1 Ireland and PBS in the US and was nominated for three American Taste TV awards, the highest awards for the Lifestyle Entertainment Industry in the US. Kevin is also Chef/Patron of the Irish Gastro Pub “Raglan Road Irish Pub and Restaurant” based in Disneyland, Orlando, Florida.   Kevin has published 5 books, “Full on Irish”, “Great Family Food”,  “Recipes that Work” and more recently “Modern Irish Food”.  His new book “Back to Basics with Kevin Dundon”  was recently launched to coincide with his TV series of the same name which has been aired in Ireland and the US, and will shortly be seen in Australiasia.  Kevin is a great supporter of food festivals and conferences, whose message is to spread the word of good quality food and food production.
